Basic:

Onion 2 pc
Salt to taste
Potato 360 g
Carrot (average) 2 pc
Vegetable oil 1.5 tbsp
Basil (1 tsp for chicken and 1 tsp. for vegetables.) to taste
Celery (1 stem) 50 g
Herbal mixture (Provençal herbs — 1 tsp. for chicken and 1 tsp. for vegetables.) to taste

How to bake chicken with potatoes, onions and carrots in the oven under foil? Prepare your food. I used chicken thighs, but you can generally bake any part of the chicken. Or take a whole carcass and chop it into pieces. For vegetables, I took onions, carrots and celery. Bell peppers, zucchini and eggplant also work well. Take the quantity and set of spices according to your taste and availability.

Wash and dry the chicken thighs. Rub them with salt and aromatic herbs. Let them sit for half an hour.

Peel the carrots and cut into slices. If the carrots are large, use halves of slices.

Peel the onion and cut into half rings.

Cut the celery into medium pieces.

Peel the potatoes and cut into small slices.

Place the vegetables in a deep bowl, add salt and sprinkle with your chosen seasonings. Pour vegetable oil over them and mix well.

Place vegetables in a suitable sized baking dish. There is no need to lubricate it — the oil is already in the vegetables.

Place chicken thighs on top.

Cover the pan with foil, folding the edges in tightly to ensure there are no holes. Preheat the oven to 200°C. Place the pan in the preheated oven for 45 minutes.

After the time has passed, remove the foil and keep the dish in the oven for another 10-15 minutes, until the chicken is browned. Serve hot with fresh herbs. Bon appetit!
