How to bake vegetables in pumpkin in the oven? Prepare your ingredients. You can use any type of pumpkin, but it is better to take a small fruit. You can change the set of vegetables according to your taste and availability; almost any vegetables can be combined with pumpkin.

Wash the pumpkin, cut off the top, and remove the inside with the seeds using a spoon. Using a sharp knife, cut off some of the flesh from the sides, just be careful not to overdo it so as not to pierce them.

Cut the pulp cut from the walls of the pumpkin into small cubes. Wash, peel and cut the potatoes into cubes, but they should be slightly smaller than pumpkin cubes, because pumpkin cooks faster than potatoes and can turn into puree if baked for a long time.

Wash the carrots, peel them and cut them into small cubes.

Peel the onions and cut into small pieces.

If you wish, you can add bell peppers and tomatoes, they will give the dish a special taste and aroma. I added a piece of finely chopped white cabbage. You can use any other cabbage, such as broccoli or cauliflower.

Place the cooked vegetables in a deep bowl. To ensure that the dish does not taste bland or boring, use a variety of spices. Garlic will add spiciness to the dish, peel a couple of cloves and finely chop. I used only salt and ground black pepper as spices, but you can add coriander, paprika, curry and others. Pour in vegetable oil. Mix vegetables with added spices and oil.

Fill the pumpkin with the cooked vegetables, placing them all the way to the top, because the vegetables will shrink significantly during baking. Pour in water until it is just below the level of the vegetables.

Cover the pumpkin with the cut lid and place it on a baking sheet with a little water at the bottom. Place the pumpkin in an oven preheated to 180 degrees for 45 minutes.
