How to make cold kefir soup with cucumber? Very simple and fast. To begin, prepare the necessary ingredients according to the list. You can take kefir of any fat content. I have 3.2%.

Wash the cucumber thoroughly. If the skin is not rough, damaged or bitter, peeling is not necessary. My skin was a little tough, so I removed it. Cut the cucumber into small cubes.

Wash and dry the green onion feathers. Cut green onions into rings. You can cut along with the white lower part of the feather or only the green stems. If you don’t like the too pungent taste of onions and garlic, you can replace them with green cherry — it has a similar taste to onions and garlic, but milder.

Finely chop the dill, parsley and cilantro. You can select, supplement or replace a set of greens to your liking. You can also add mint, spinach, wild garlic, etc.

Peel the garlic cloves and finely chop or pass through a press. If you don’t like the strong taste of garlic in your soup, you can reduce the amount or not add it at all.

In a bowl, combine chopped cucumbers, herbs and garlic.

Pour in cooled kefir. Season the soup with salt and pepper to taste. You can reduce or increase the amount of kefir depending on the desired thickness of the soup. The thickness of the soup is also affected by the fat content of the kefir itself. The higher the fat content, the thicker the kefir itself and, accordingly, the soup as a whole.
