Chinese Cabbage Borscht

Ingredients (5 portions)

Basic:

Onion 1 pc
Garlic 1 clove
Tomatoes 2 pc
Salt to taste
Water (or broth) 2 l
Potato 4 pc
Bay leaf 1 pc
Tomato paste 2 tbsp
Beet 1 pc
Carrot 1 pc
Vegetable oil 20 g
Dry spices to taste
bell pepper 0.5 pc
Chinese cabbage 200 g

How to cook borscht with Chinese cabbage? Prepare the necessary ingredients for this. For the Lenten table we will prepare borscht in water. But you can cook it with any broth. Prepare all vegetables in advance. Wash in running water to remove dirt and peel.

Pour the required amount of water into the pan and bring to a boil. Cut the peeled potatoes into small pieces and place them in boiling water. Leave to cook for 15-20 minutes.

At this time, finely chop the onion and grate the carrots. Pour a little vegetable oil into a hot frying pan and fry the vegetables for 2-3 minutes until soft.

Cut bell peppers and tomatoes into small cubes. Place them in the pan. Mix everything and fry for another 2-3 minutes. The tomatoes will become softer and release juice.

Grate the beets on a coarse grater.

Place it in the pan. Fry all the vegetables over low heat for another 5-7 minutes. During this time, the beets will become softer and decrease slightly in size.

Now add the roasted vegetables and some chopped garlic to the pan. Add bay leaf. Add salt and spices to taste. Mix everything, bring to a boil and remove from heat. Do not boil the borscht, otherwise it will lose its color.
